Teryaki Fried Rice

Ingredients:
  • 1/2 cup brown rice
  • 1 Tbspn. extra virgin olive oil
  • 1.5 tspns. minced garlic
  • 1 -2 cups frozen mixed veggies
  • 1/2 onion, cut in strips
  • 1 egg + 1 egg white whisked
  • 2 Tbspn. teryaki sauce
  • Salt and Pepper
  • Chicken - I used 1.5 pieces cut into bite size pieces

Directions:

  1. Cook brown rice according to the package.
  2. Drizzle pan with about 1 tbspn. teryaki sauce. Heat pan to med-high heat. Cook chicken for 4-6 minutes until browned on the outside and no longer pink on the inside. Set chicken aside.
  3. Add oil to skillet, heat and add garlic.
  4. Add onions, saute.
  5. Add veggies.
  6. Stir fry veggies for a few minutes and then move them to the outside.
  7. Add whisked egg to the center of the pan. Stir until eggs are slightly scrambled.
  8. Add rice and teryaki sauce.
  9. Mix. Sprinkle with salt and pepper.















I will probably do more veggies next time (I used one package of steamfresh veggies), but it was very tastey! You can definitely do it without the chicken too...but I think my hubby needed some meat! :)
