- 1/2 cup brown rice
- 1 Tbspn. extra virgin olive oil
- 1.5 tspns. minced garlic
- 1 -2 cups frozen mixed veggies
- 1/2 onion, cut in strips
- 1 egg + 1 egg white whisked
- 2 Tbspn. teryaki sauce
- Salt and Pepper
- Chicken - I used 1.5 pieces cut into bite size pieces
Directions:
- Cook brown rice according to the package.
- Drizzle pan with about 1 tbspn. teryaki sauce. Heat pan to med-high heat. Cook chicken for 4-6 minutes until browned on the outside and no longer pink on the inside. Set chicken aside.
- Add oil to skillet, heat and add garlic.
- Add onions, saute.
- Add veggies.
- Stir fry veggies for a few minutes and then move them to the outside.
- Add whisked egg to the center of the pan. Stir until eggs are slightly scrambled.
- Add rice and teryaki sauce.
- Mix. Sprinkle with salt and pepper.
I will probably do more veggies next time (I used one package of steamfresh veggies), but it was very tastey! You can definitely do it without the chicken too...but I think my hubby needed some meat! :)
