Delicious dinner, tough workout, end of the week.

Jake seriously watched Phil work outside (he was putting new mulch down) for about 45 minutes. Notice their matching blue water bottles. He got really excited when Phil came by the window and they could have a "water break" together. :) He would pound on the window and squeal with excitement!! This boy is just amazing. He can always make us smile...we love him SO much!!







Does it get any better than that? You know, I read/hear a lot about "eating to live" rather than "living to eat." So I wouldn't say I "live to eat" but I sure do enjoy it! And I think you can enjoy eating but still eat healthy! We had one of our new favorites tonight, Chicken tacos with Charred Tomatoes. I'll share the recipe at the end of the post.

We had an intense, awesome workout today at ASI. They are doing a new thing and sending you a report via e-mail after your workout. It was pretty cool! We always see our calories before we leave, but it was a little more in depth. I burned 546 calories, lots of stress, and had fun! It was a really great workout.

I had a great lunch yesterday with a friend (and hopefully Mud Run teammate for the fall!) from work. It was fun to catch up with her! It was also a rest day, so even though I missed running and working out yesterday, I know it was good for my body to get that rest!

I'm so glad it's the end of the week! Phil has to work late tonight(even later than usual) so it'll be nice to have some family time tomorrow. Saturday I will be gone most of the day helping with our military banquet at church. I'm looking forward to it! It's also my Dad's b-day so it'll be a great time honoring him as a veteran and a birthday boy! I love that guy!!

Chicken Tacos with Charred Tomatoes:

Ingredients:

  • Cherry tomatoes cut in half (I got them fresh from my garden - yummy!!)
  • Chicken cut up in bit sized pieces (I used about 1 1/2 pieces of chicken - it will serve the 3 of us)
  • Dash of salt and pepper
  • Extra virgin olive oil
  • About 1/2 cup chopped white onion
  • 1 garlic clove, minced
  • 2 tsp. Lime juice
  • Corn tortillas (heated)

Directions:

  1. Heat 1 tsp.oil in skillet over high heat until hot. Add tomatoes and cook, stirring occasionally until charred on all sides - about 6-8 minutes. Transfer to plate to cool slightly.
  2. Add 1 tsp. oil to pan and heat on high until hot. Add chicken, sprinkle with salt and pepper and cook, stirring occasionally until browned and no longer pink in the middle - about 3-5 minutes. Transfer to plate.
  3. Reduce heat to med. and add 1 tsp oil. Add onion and cook, stirring until soft - about 2 minutes. Add garlic and cook stirring - about 30 seconds. Add lime juice, chicken, and tomatoes. Cook, stirring until heated through - 1-2 minutes. (you are supposed to add cilantro and scallions now but I didn't have any; I think that would make it even more delicious, though, so I need to remember next time!!)
